The Sencha used in this refreshing green tea blend thrives in the rolling volcanic hills of Kagoshima Prefecture on the island of Kyushu, the southernmost of Japan's four main islands. The island is known for its breathtaking volcanic landscape and unique climate. The harvest takes place in spring and produces a mild, highly aromatic tea with a delicate sweetness. Sencha, Japan's most popular green tea, literally means "tea infusion" in Japanese. Yuzu Sencha is a blend of the Yabukita and the rare Kanayamidori cultivars. The emerald-green, needle-shaped tea leaves enchant with a bright jade-green cup. The wonderfully aromatic, fresh character of a very fine Sencha harmonizes perfectly with the sparklingly sweet, incomparably complex citrus nuances of the Yuzu fruit. Yuzu is a citrus fruit native to East Asia for thousands of years, originating from a cross between the Ichang lemon and the wild mandarin orange. It is considered a classic ingredient in Japanese cuisine and has a very complex flavor of citrus notes and a floral aroma, similar to a blend of lime, lemon, mandarin orange, and umami sweetness. The yellow to light orange fruit is the size of a tennis ball, and the flesh is very juicy. The yuzu fruit is also enjoying increasing popularity in Europe and is now included as an ingredient in several foods.
