Because of its sublime quality, white tea was reserved for emperors and the nobility in China. Its mild bouquet and unique jasmine scent make it a majestic delight.

White tea owes its name to the white, silky down that surrounds the young tea buds and is a tea with only two percent partial fermentation. This fermentation takes place naturally during the withering process. The highest-quality variety, "Yin Zhen" (Silver Needle), is one of the most sought-after and correspondingly most expensive white teas, for which only particularly young and aromatic shoots of the large white tea bush are picked. The harvest only takes place on two or three days a year when the climatic conditions are perfect. It must be neither rainy nor windy. This would damage the sensitive tea. As soon as the blossoms of the jasmine bush become available a few weeks later, they are carefully mixed into the tea by hand to "flavor" it. A few days later, the blossoms are again painstakingly sorted by hand, leaving behind a wonderfully floral jasmine scent.
