Pappardelle is the pasta with the strongest flavor. It originates from Tuscany, where the sauces are based on rabbit and wild boar. Pappardelle is very similar to tagliatelle, but wider (12 mm) and can evoke intense sensations. The semolina feels grainier when chewed.
Thanks to its relatively thick dimensions, the pappardelle gives the dish an elegant presence.
