A nearly forgotten fruit variety, the quince is now celebrating a triumphant return to fine dining thanks to its captivating, complex aroma. A few old stands have survived in old orchards along the Lower Rhine and in Münsterland. The fruits of these trees, which are up to 60 years old—Constantinople apple quince and some Portuguese pear quinces—are now more flavorful than ever.
