The latest pasta from Casa Martelli was inspired by the story of Peciolo, a Pisan baker. The fusilli are modeled after the Leaning Tower of Pisa. The ridges on the edge resemble the walkway leading to the top of the tower. They pair beautifully with tomato-based sauces.

Martelli's artisanal pasta from Tuscany gets its special quality from the slow mixing of the dough, which is made only from the best durum wheat semolina and fresh water. This dough is pressed through bronze molds, giving the pasta its typical rough surface. The pasta is then slowly dried at a maximum of 33 to 35 degrees. This usually takes at least 50 hours, although the length depends on the weather and humidity. The result is flavorful pasta that combines particularly well with the sauce thanks to its porous surface. The small pasta factory only employs family members, and they all have one thing in common: years of professional experience and, above all, the goal of producing high-quality pasta in the artisanal Italian tradition.
