Elderberry (also known as Holler) has been cultivated in monasteries and farmsteads since the Middle Ages. We use berries of the intensely flavorful Haschberg variety (sambucus nigra), which originally comes from the Klosterneuburg Danube floodplain. The juice is tart and delicate and is often enjoyed warm with a little honey during the colder seasons.
