Psenner distills gin with considerable experience, using a simple brew, in a purpose-built, traditional distillation facility. This small (300-liter) still features a basket suspended in the still's flask, in which all the aromas of the spices (nutmeg, lavender, aniseed, gentian root, lemon peel, orange peel, cinnamon sticks, cloves, etc.) are extracted by the rising alcoholic vapors. The macerate in the still itself contains a substantial amount of juniper, coriander seed, cranberries, and rowanberries. Pure wheat alcohol is used to distill all of these botanicals.
