Fritz Vaval has been the head of the Arrawaks distillery in Cavaillon, southern Haiti, for 10 years. His family has run the distillery since 1947. He cultivates the "Madame Meuze" vine on 20 hectares. The Nazon-type Clairin, made from pure cane sugar, is absolutely magnificent in its finesse and complexity. It is fermented with native yeasts and then distilled in a 10-cup copper column still. |
