The apricot juice is made exclusively from the Orangé de Provence apricot variety, which is rarely cultivated today.
The apricots lend the nectar a pleasant fruity sweetness and a crisp, fresh acidity. The increased viscosity of the nectar allows the flavor of the freshly harvested apricots to linger on the palate for some time.
