The pole-line method (netless, artisanal fishing method) is the best way to ensure species conservation and preserve the marine ecosystem. Certifications such as "Dolphin Safe" and "Friend of the Sea" are a testament to sustainability. This skipjack tuna is truly wild-caught and naturally propagated. This means that juveniles are not farmed unnaturally and then released into the wild.

The tuna is processed by hand, from scaling and filleting to partial canning and labeling. No emulsifiers, sweeteners, preservatives, or any kind of additives are used. The fish is steamed at 100°C to an internal temperature of 65°C. Recipe ingredients such as milk, onions, peppers, garlic, parsley, paprika paste, etc., originate, whenever possible, from the fajãs of São Jorge, where they are cultivated and harvested by hand, as the steep terrain usually precludes the use of machinery. Onions, garlic, and parsley are chopped by hand. A unique natural product from the Azores. Products that do not thrive in the Azores due to the climate are sourced from mainland Portugal.
