The harvest only takes place on two or three days a year when the climatic conditions are perfect. It must be neither rainy nor windy. This would damage the sensitive tea. As soon as the blossoms of the jasmine bush become available a few weeks later, they are carefully mixed into the tea by hand to \"flavor\" it.
